Things to do in the short short Garlic Scape season:
Mix 10-12 ounces of cream cheese in the food processor with 4 garlic scapes and 3 tablespoons of fresh dill. Combine until well pureed. Ours took on a pale green color, and after sitting in the refrigerator overnight had a lovely fresh garlic taste today.
Chop garlic scapes and sauté in butter. Add balsamic vinegar and reduce. Baste pork tenderloin with it, or use as a dipping sauce for whatever suits your fancy. Any kind of savory fritters or dumplings spring to mind.
Saute garlic scapes in butter. Combine in a processor with olive oil, some good parmesan, and some oregano and you have a lovely garlic pesto-like spread.
Just blanch them for 3 minutes, then sauté them, roast them, or substitute them in any dish you would use asparagus.
Substitute them anywhere you would use garlic, scallions, or both.
