Lemongrass Shrimp Soup
1 cup chopped sweet onions
1 cup chopped sweet peppers
½ cup chopped fresh cilantro
4 cloves of garlic
2 tablespoons turmeric
1 teaspoon cayenne
8 cups chicken stock
1 can coconut milk
3 small stalks of lemongrass, chopped and put into a cheesecloth bag
2 medium potatoes, diced
1 tablespoon white pepper
1 tablespoon salt
Juice of 1 small lime
1 pound steamed shrimp, shelled
Procedure:
In a large stainless pot, sauté the onions and peppers, add the crushed garlic cloves for the last couple of minutes.
Add the chicken stock, turmeric, cayenne, white pepper, salt, potatoes, and coconut milk. Bring to a rolling boil, and then simmer for one hour.
Steam and peel the shrimp.
Add the shrimp, lime juice, and cilantro, simmer for a couple more minutes and serve.

Your lemon grass soup sounds delicious. I have thought about trying to grow lemon grass before…this soup of yours really makes me want to grow a small patch.
